Cava is owner by husband and wife Jp McMahon and Drigín Gaffey. Cava uses local (Colleran's Butchers), free range (Chicken and eggs), free trade (Coffee) and organic (Lemonade) produce.
The restaurant buys its Spanish produce from Sheridan's Cheesemongers (Galway) and B & O Latin importers (Dublin) who import directly from Spain.
Cava makes its own salted cod and its menu reflects a 'nose to tail' eating policy (the eating of cuts of meats, such as tongue, trotters, and offal, which are generally discarded). Mad about Wine (Moycullen) provides Cava with its Spanish wine.
